Slideshow: Modern Summer Cocktails By Kathy Casey Updated on June 17, 2021 Save Rate PRINT Share Close Photo: © Lucas Allen Yield: 1 drink Cook Mode (Keep screen awake) Ingredients 2 tarragon sprigs Ice 1 ounce gin 1/2 ounce Cognac 3/4 ounce fresh lemon juice 2 tablespoons peach puree (see Note) 1/2 ounce Simple Syrup 1/2 ounce chilled brut Champagne Directions Tear 1 tarragon sprig and drop it into a cocktail shaker. Add ice and the gin, Cognac, lemon juice, peach puree, and simple syrup and shake well. Fine-strain into a chilled coupe. Top with the Champagne and garnish with the remaining tarragon sprig.
