Spaghetti All'assassina or "Assassin's Spaghetti" is one of the most peculiar and obscure of my favorite dishes. Originating in Puglia in Southern Italy, it is cooked in the most blasphemous way known to Italians... The spaghetti is fried. There are many reasons for the name, ranging from secret cults to the unconventional way it's cooked. The spaghetti, along with minced garlic, is placed in a pan with olive oil on high flame. Repeated pourings of a broth made of blended tomatoes and equal parts of salted water is done periodically. This is where the genius of the dish shines. The spaghetti boils and fries/chars at the same time - caramelising the tomatoes to release their sweet flavor. I like to balance this with a bit of pickled jalapeños for a spicy angle. The result is a flavorful pasta deeply entangled in a sweet tomato sauce along with the heat and sourness of the chillis. Its one of my go to comfort foods and on the easier side of things to make. All in all a wonderful find of a recipe. Ingredients (1 serving) 170g Spaghetti 1/2 a clove of Garlic 3-4 Blended Tomatoes in equal parts of water 5-7 Pickled Jalapeños 1-3 Pickled Chillies (For Garnish) P. S. - A big thanks to Leonardo Cavanha without whom I could have never done this #GSoC2024 #googlesummerofcode

This pesto pasta salad with tortellini takes less than twenty minutes to make, and it is a great side dish and even main dish! Here's the details: -Tortellini – technically you could use any tortellini you’d like. I usually purchase the cheese tortellini! -Pesto – you can use homemade basil pesto, kale pesto, or jarred pesto sauce. -Sun-dried tomatoes – I purchase 1 – 8.5 oz jar of sun-dried tomatoes in oil. I drain the oil and then chop the tomatoes. -Roasted pine nuts – I like to toast the pine nuts before adding them to the salad. 1) Cook the tortellini according to package directions. Drain and transfer the tortellini to a large bowl. 2) Toss the pesto and sun-dried tomatoes with the cooked tortellini. 3) Garnish with the toasted pine nuts, taste and season with salt and pepper. How to pine nuts: Place a nonstick skillet over medium to medium-low heat. Add the pine nuts to the skillet (do not add any oils) and cook, stirring frequently until the pine nuts are golden. It takes me about 10 minutes to toast pine nuts. You’ll be tempted to turn the heat to high in hopes of toasting the pine nuts quicker… but beware, you’re more likely to burn the nuts if you do this.

Hello friends family and acquaintances today is NATIONAL CHEESE PIZZA DAY - September 5! On September 5th, National Cheese Pizza Day says, "Hold the toppings!" That's right, cheese is all you need when celebrating this pizza holiday. Whether the pie is homemade or ordered in, make it cheese only. Add a variety of cheeses to your pie to celebrate. Smokey gouda or a little gorgonzola might mix it up. If you like a little cheddar, mild or sharp shredded across the top will do. Debates prevail over thin or thick crust. However, that debate is for another day. The cheese holds the spotlight on this occasion. We do know a few things about pizza in general, though. In ancient Greece, they covered their bread with oils, herbs and cheese. Many believe this to be the beginning of the pizza. In Byzantine Greek the word was spelled πίτα, or pita, meaning pie. The Romans also developed a version of the pizza pie. Using bay leaves for flavoring, the Romans topped the dough with cheese and honey. When it comes to the modern pizza, we turn to Italy. Their Neapolitan flatbread created the beginnings of the pizza we know and love today. It was topped with mozzarella cheese made from high-quality buffalo milk. In the United States, we love our pizzas, especially cheese pizza. In 1997, it's estimated the United States produced more than 2 billion pounds of pizza cheese. That's a lot of cheese! Our passion for pizza began in 1905 when the first pizza eaty oped in New York's Little Italy. It's been a cheese love affair ever since. #National Cheese Pizza Day #dallasharristips
