Spaghetti All'assassina or "Assassin's Spaghetti" is one of the most peculiar and obscure of my favorite dishes. Originating in Puglia in Southern Italy, it is cooked in the most blasphemous way known to Italians... The spaghetti is fried. There are many reasons for the name, ranging from secret cults to the unconventional way it's cooked. The spaghetti, along with minced garlic, is placed in a pan with olive oil on high flame. Repeated pourings of a broth made of blended tomatoes and equal parts of salted water is done periodically. This is where the genius of the dish shines. The spaghetti boils and fries/chars at the same time - caramelising the tomatoes to release their sweet flavor. I like to balance this with a bit of pickled jalapeños for a spicy angle. The result is a flavorful pasta deeply entangled in a sweet tomato sauce along with the heat and sourness of the chillis. Its one of my go to comfort foods and on the easier side of things to make. All in all a wonderful find of a recipe. Ingredients (1 serving) 170g Spaghetti 1/2 a clove of Garlic 3-4 Blended Tomatoes in equal parts of water 5-7 Pickled Jalapeños 1-3 Pickled Chillies (For Garnish) P.
