Château Latour, 1st Classified Growth, is located in the heart of the Médoc wine region, about 50 km north-west of #Bordeaux, where the legend of the Bordeaux vineyard was created. The heart of its terroir, the Enclos, dominates the Gironde estuary where the river and the ocean have brought it its geological complexity over the centuries and promote the mild climate every day. This privileged location 300 meters from the estuary gives it all its typicality and tempers the excesses of the weather, in particular the waves of cold and frost, as in 1991. The domain enjoys a double influence: • The proximity of the Atlantic brings the generous character of an oceanic climate; • The immediate proximity of the large body of water in the estuary protects against the potential cold at the start of the vegetative cycle and also allows the grapes to ripen earlier, which can prove invaluable as the harvest approaches. THE CYCLE Although the #Médoc climate is often capricious, which gives each vintage a real personality, the cycle is generally characterized as follows: WINTER A mild and humid winter with some advances in cold spells. SPRING A spring usually divided into two half-seasons, the first cool and humid, the second already hot but often rainy. SUMMER A hot and often humid summer until mid-July, then drier. Daytime and nighttime temperatures are generally more contrasted in August, thus accelerating the ripening of the grapes while maintaining their aromatic freshness. AUTUMN An often sunny start to autumn with cooler temperatures. Art and Cask has secured once again around 40 prime barrels, 2 x wines, lade by the finest coopers in the world. Château Cos d'Estournel, 2nd Classified growth, Saint Estèphe. The #terroir of Cos d'Estournel benefits from a privileged geographical position, in the heart of a hilly area in the North of Médoc. The origin of the name Cos, meaning hill of pebbles in old Gascon, perfectly reflects this situation. The central part of the vineyard is located on a plateau of deep gravel, from which two slopes decline. One is oriented to the east and the other to the south, on gravel and clay soil. The whole is also crossed by a clayey vein which crosses the estate in a long diagonal. On the property, the grape varieties and the work of the vine have been designed according to the exposure and the soil of each plot, even each row, while respecting Nature and the environment. This geographical and geological configuration offers an incredible combination of soils and exposures, resulting in a great diversity of terroirs, an extraordinary asset. The Valpolicella is a unique area that has Lake Garda on its western edge acting as a moderator of temperature; 11 valleys run north to south giving altitude to vineyards and creating distinct microclimates. It has all the important soil types of great wine regions: calcareous, glacial rocks mixed into clay and volcanic. The region’s native grapes, Corvina, Corvinone, Rondinella, Molinara and Oseleta, have grown here for over a millennia and work in concert to tell the story of the terroir, even when dried via the appassimento method, the traditional technique of dehydrating grapes by up to 40%. When I finally paid attention, I saw nuance and differences based on terroir, not just process. High-altitude limestone-based wines are more linear, high toned and nervous with energetic acidity; while wines from the terraced vineyards with more clay in their soils were dense, more powerful and more structured. #valpolicella #amarone #ripasso #recioto #veneto #italy #wine #region #style #process #production #history

We're not literally talking about wines made from grapes grown on the sides of volcanoes - although we'll absolutely be tasting some of these! Did you know that, in many parts of the wine world, vines grow on soils formed from the weathering of volcanic rocks, otherwise known as “extrusive igneous” rocks? According to the Wine Enthusiast "basaltic terroirs make up a significant portion of global volcanic terroirs." Regions with basaltic terroirs include Mount Etna, the Willamette Valley, the Canary Islands, Soave Classico and Australia’s Yarra Valley. Elsewhere volcanic terroirs are found in Tenerife, the Azores, Languedoc, Napa and Sonoma valleys, Campania, Alsace, Tokaj and Santorini. Benjamin Spencer, winemaker and author of The New Wines of Mount Etna, believes that volcanic soils can contribute an “exciting tension, edginess and savory quality” to the wines they produce. We'll taste a range of these wines to explore whether the concentration in acidity and mineral compounds found in volcanic soils does indeed produce wines with extra fruit purity, elegance, suppleness and a mouth watering finish.

Harvest is coming ! It's time to gather all the information to understand the quality of the upcoming vintage. It's also time to prepare the best ways to take care of thoseprecious grapes and carry them through the vinification process. We must answer so many questions in a short time. Among them: • What will be the balance point between sugar, acidity and aromatic potential ? • How should we press the grapes to preserve their acidity ? • What will be the best temperature for the fermentations to develop the aromatic potential ? • How should i prepare the plot selection to assure the consistency of Champagne ? Despite a very difficult year in the vineyard with several great issues such as frost, hailstorms, epidemic downy mildew and a cold weather during flowering, our growers managed to carry a decent quantity of grapes to the final ripening run. Today, Chardonnays are ripening prêt type well but show a great variability of sugar level between plots and even inside plots. Pinots noirs and Meniers are very dynamic and will be probably harvest first. For now botrytis is contained, and acidity levels remain high.
