Harvest is coming ! It's time to gather all the information to understand the quality of the upcoming vintage. It's also time to prepare the best ways to take care of thoseprecious grapes and carry them through the vinification process. We must answer so many questions in a short time. Among them: • What will be the balance point between sugar, acidity and aromatic potential ? • How should we press the grapes to preserve their acidity ? • What will be the best temperature for the fermentations to develop the aromatic potential ? • How should i prepare the plot selection to assure the consistency of Champagne ? Despite a very difficult year in the vineyard with several great issues such as frost, hailstorms, epidemic downy mildew and a cold weather during flowering, our growers managed to carry a decent quantity of grapes to the final ripening run. Today, Chardonnays are ripening prêt type well but show a great variability of sugar level between plots and even inside plots. Pinots noirs and Meniers are very dynamic and will be probably harvest first. For now botrytis is contained, and acidity levels remain high. Four photos which show the uniqueness of Yatir Forest and Ramat Arad. Yatir Forest is Israel's largest planted forest and a meeting place between the Negev Desert, the Judean Desert and the southern Judean Hills. High altitude enough (up to 900 m.) to occasionally get snow in winter. Ramat Arad is in the north western Negev Desert at 500 m. altitude. Within Yatir Forest are the vineyards which supply Yatir Winery. At Ramat Arad, the grapes go to the 'Darom by Yatir' label. They are 10 minutes apart from each other. What is a USP of both areas: the camels! How many vineyards do you know where camels get into the frame? Bottom left photo is Ramat Arad. The others are Yatir Forest.

🍇 Asia Minor, a large peninsula which forms most of contemporary Türkiye (Turkey), is considered to be one of the most ancient wine producing regions in the world. But its wines are yet to be discovered by drinks enthusiasts globally. With a total of 420,000 hectares planted, Türkiye has the 5th largest vineyard area in the world (OIV, 2021). But most of this vineyard land is used to produce fresh and dried grapes, rather than wine grapes. Despite its ancient winemaking tradition, only around 15% of the total vineyard area is dedicated to wine grapes. This places national wine production well below countries like Greece, Georgia and Romania. 🍷 While grapes are grown all around Türkiye, some regions are less suited to commercial viticulture. The central and eastern Black Sea coast experience excessive rainfall during the growing season, resulting in high disease pressure, while the eastern highlands, situated at 2,000-3,000 metres above sea level, are too high. ✨ Four areas collectively produce nearly 85% of wine grapes in the country (Turkstat, 2021). 💠 The Aegean is the country’s most important wine producing region, producing around 30% of national wine production. It has several subzones worth exploring: 📍Islands – Bozcaada & Gökçeada 📍Coastal Aegean – Urla, Selçuk, Bodrum, Datça 📍The Aegean Inlands – Manisa, Denizli, Uşak 📍The Southeast zone, home to the indigenous black grape varieties Öküzgözü and Boğazkere, comes a close second in importance.
