The idea that non-alcoholic drinks are too expensive feels odd, although understandable, to me. As someone who doesn’t drink, I never choose a non-alcoholic cocktail because it’s “cheaper” than an alcoholic one. There’s obviously no choice there for me. However, the public perception that a cocktail without alcohol should cost less likely stems from the days when a "mocktail" was just a mix of juices and soda served in a large glass for a few bucks. Today, non-alcoholic cocktails are crafted with premium non-alcoholic spirits, offering a more balanced and complex drink that can cost the same, if not more, than their alcoholic counterparts. In fact, making a non-alcoholic cocktail can be just as challenging, if not more so, because they don’t simply substitute into classic cocktail recipes as easily as spirits do. Chris Cardone, I get your scenario, but I have another idea. Profits or markups at the bar vary by product type, whereas, hard alcohol has a lower percentage cost than beer or wine when calculating markups. Anyone selling NA alternatives can offer these at a lower markup of profit in the same sense and therefore provide these beverages at a similar price to their alcoholic counterparts. Yes, this means less profit on the sale, but it also satisfies a better customer experience. Building profits is not just about charging more. Sometimes sacrificing a bit of short-term profit can pay off with additional customer counts and other metric scenarios.

Taste remains overwhelmingly the most important attribute that US consumers seek when choosing an alcoholic drink, our latest annual Bloomberg Intelligence survey confirms. This is followed by price, alcohol content and brand, which indicates that imbibers seek taste experimentation and welcoming quirky producer launches of new and different RTD cocktails such as Straightaway Cocktails' Bees Knees and Nitro Espresso Martini canned cocktails. Respondents cited drink portability again as a less important attribute, likely due to more normal access to restaurants since the restrictions of the pandemic. We’re seeing some interesting trends in cocktail sales across Union bars and restaurants from September 2023 to September 2024. 1. Margaritas are still a favorite, with a 9% jump in sales. 2. Green Tea Shots saw a dip, down 15%. 3. Espresso Martinis grew in sales by 104%! Most other cocktails remained steady, but these shifts in sales of our venues’ most popular drinks demonstrate just how consumer preferences are evolving.
