‘Do delivery aggregators really understand the financial realities of running a restaurant - and if they did, would they do anything about it?’ A recent webinar from Food On Demand and theDelivery.World featured a senior executive from a major European restaurant operator's response: If only they understood, things would be so much better – and we’d all make money. The problems with excessive commission fees, a lack of transparency, and operational limitations are at the center of this conversation. Given their narrow 3-5% profit margins, restaurants find the 30% delivery platform fees especially onerous. Tensions remain even though some contend that aggregators do, to some extent, understand these challenges. The central issue? Aggregators frequently put their own needs ahead of comprehending the difficulties faced by restaurants. Thoughts on Delivery Platform Efficiency In the fast-paced restaurant industry, every minute counts, so it’s crucial that delivery platforms operate smoothly. Recently, however, I’ve encountered some frustrating delays. When a driver isn’t automatically matched to an order after 15 minutes, we’re expected to call in – often waiting on hold for 10+ minutes – to have each unmatched order reviewed individually. This means more pressure on the team, and it’s time we could spend focusing on our customers. Automation should simplify our work, not add delays. Platforms like Just Eat, for example, have systems in place to handle these issues more efficiently. As restaurant partners, we rely on delivery platforms to provide a seamless service that aligns with our fast-moving industry. Here’s hoping we see more (Uber) support from providers in making this process better. Has anyone else experienced these kinds of delays? The next time you see an advertisement on a food delivery website, consider who gains more: the restaurant or the delivery company. Food delivery companies often earn a larger profit than the restaurants on each order. For example, Grubhub charges restaurants over 35% per order and also imposes delivery fees, service fees, and driver tips on customers. They claim they charge 24%, but charge way more. #Grubhub

One key theme, and the subject of much discussion, was the recognition that restaurant delivery faces ongoing disruption and change, with restaurants grappling with what they see as flaws in the third-party delivery model: high commission rates (and other charges), the lack of transparency about customers, and limited access to information. At the same time, the shift to delivery, with its emphasis on technology, challenges traditional people-focused restaurant business models. Nevertheless, many restaurants are now exploring first-party delivery to mitigate the flaws in third-party delivery. As restaurants adapt by integrating tech expertise, constant dialogue between all stakeholders is essential for navigating this evolving landscape.
