The Art of Taste: Elevating Food Beyond Cooking Many of us live to eat, while others eat to live. In both cases, taste is essential. Good food brings joy and satisfaction, but what truly makes food taste good? There are two key aspects to consider: the inherent flavors and fragrances of the food items. For example, biting into a ripe, sweet apple is a delightful experience—the juices and aromas enhance your sensory enjoyment. The visual appeal of food plays a significant role too; when food looks, smells, and tastes good, it creates a holistic experience. This principle applies to both raw and cooked food: it must first look great, then smell enticing, and finally, taste amazing. There are two approaches to achieve this: 1. Traditional Cooking: While cooking enhances flavors, it often comes at the cost of losing nutrients, vitamins, natural flavors, colors, and textures. We tend to add spices, condiments, and garnishes to compensate, enhancing taste, aroma, and visual appeal. Even processed foods rely on added flavors and visual enhancements to look and taste good. 2. Minimal Cooking:This approach focuses on cooking just enough to make food soft, edible, and digestible while preserving its natural vitamins, nutrients, colors, textures, and structures. Think of it like a slightly cooked apple—digestible, microbe-free, yet retaining its natural fragrances and textures. Historically, Indian cooking has involved extensive boiling to eliminate microbes and infuse spices. However, as our world evolves, so do our needs. With advancements in medicine and improved immunity, it's time to embrace minimal cooking, preserving the food's natural qualities while still enhancing it with spices and fragrances. This approach blends the best of both worlds, offering a natural and enriched eating experience.
