Stability is one of the main parameters that you must need to evaluate if you are changing or creating new formulations of your product. The only limitation of the conventional stability testing is the amount of time you need to invest to check the final stability of your new product. Using the STEP technology of LUM you can easily develop or formulate new products and not worry about the impact of its stability since you can get the stability results as fast as possible. Imagine getting your 6 months stability at a span of 2 hours? or 1 year stability for 4hours? #stability #LUMifuge #LUM #foodresearch #cosmetics #personalcare
For people following a vegetarian or vegan diet, it can be more challenging to consume enough proteins. The Horizon 2020 #PROTEIN2FOOD project, initiated by the University College Cork, was making waves in developing innovative plant-based protein-rich foods and beverages, including meat replacers, cereals, bakery products, milk substitutes, sports drinks, and infant formulas. Their focus was on utilizing high-protein crops like quinoa, amaranth, buckwheat, lupins, faba beans, chickpeas, and lentils to create sustainable and nutritious alternatives to current market options, which are often soy-based. 🌱 A key tool in their research was the LUMiSizer analytical centrifuge. It has been invaluable in assessing the physical stability of plant-based milk products, helping the team understand and improve creaming, sedimentation, and separation rates. This ensures that the plant-based milk products developed not only taste great but also have the stability and quality consumers expect. With these innovations, PROTEIN2FOOD is not just kept up with market trends—they've been setting new standards for sustainable, nutritious, and delicious plant-based foods! 🚀 Instant download here: https://bit.ly/3YmdvPa #LUM #LUMGmbh #LUmiSizer #Protein #PlantBased #Innovation #Sustainability #FoodTech #HealthyLiving #FutureOfFood

Improving taste, access, and health attributes are crucial for consumers of plant-based products that are meat alternatives. According to the Mintel report (Plant-based Proteins US, 2023), 48% of Americans cite taste as the primary reason for not purchasing plant-based meat alternatives. However, a promising 36% of US consumers expressed their willingness to increase their consumption if the taste was on par with meat. In addition to taste, another aspect that concerns consumers is the issue of processed products: around 30% of US flexitarians who refrain from looking for meat alternatives do so due to their perceived level of processing. Unsurprisingly, the plant-based food industry's main challenge is creating a version that offers functionality, nutrition, and flavor. So, how do you cleanly and healthily enhance the flavor of plant-based recipes? Yeast and yeast extract are great options for the food industry to apply to plant-based foods or drinks to improve flavor, mask unwanted notes, and contribute body and mouthfeel to recipes. Biorigin, with over 20 years of experience, offers a range of natural-origin vegan ingredients. These can be used as a flavor base to add specific notes and personality to formulations, making foods tastier and more balanced. Diving into the 'ultra-processed' debate: Do meat-replacements 🌱 truly deserve the critique? 👀 As the Netherlands observes National Week Without Meat and the UK celebrates National Butcher’s Week, meat substitutes like THIS™ face criticism on both sides of the sea. 🌸 Let’s delve into a study by ProVeg international 👇🏼 ProVeg compared 130 vegetarian / vegan substitutes with 41 animal products, revealing that plant-based options contain: 🌵 less saturated fat 🌵 fewer calories 🌵 more fibre 🌵 similar amounts of protein 🌵 sufficient iron 🌵 sufficient B12 🌵 less salt than processed meat 🌵 more salt than unprocessed meat 🌸 Who eats these products and why? 🌵 Omnivores represent the largest segment purchasing alt meats. 🌵 Flexitarianism is multi-generational 🌵 The primary motivation is health (47%) 🌸 ProVeg also examined whether the products met the criteria of the Dutch Nutrition Centre (level of salt, sugar, risk of lifestyle diseases, etc.). 🌵 33% of meat substitutes met the criteria 🌵 only 17% of animal products met the criteria… 🌸 Are we holding vegan foods to unfair standards? 👉🏼 Let's not forget that meat products are often heavily processed. Although they may originate from nature, that doesn't make them natural once they hit the supermarket shelf. 👉🏼 To summarise, substitutes, as highlighted by Martine van Haperen, are often unfairly labeled as ultra-processed, akin to crisps and sweets. The level of processing is not an indication of how healthy a plant-based product is. 🌸 Conclusion: Media, let's examine the facts and halt the vegan product bashing, shall we?! 🤣 ——— Hi I'm Sophie the vegan designer. One of my favorite things about the food and beverage industry is its appetite for innovation and fearless evolution. Beyond Meat is set to release its fourth generation of Beyond Burger and Beyond Beef products this Spring. The reformulated range of plant-based meats has been designed with an emphasis on nutrition and now features avocado oil, which has helped reduce the saturated fat content by 60%. There is also 20% less sodium and more nutrient-dense ingredients like red lentils and fava beans. As a non-meat eater, I can't wait to conduct my very own taste test later this year!🍴🍔 Read all about it in this article from Food Business News: https://loom.ly/JduiNwc #FoodAndBeverage #BeyondMeat #Innovation #PlantBased
