The Japanese-style Shun Chef’s knife is eight inches in length — a common length for chef’s knives since you’ll use it for tasks including chopping and slicing vegetables and crushing garlic. This chef’s knife became a top pick for us because of the curved blade, which allows you to use a rocking motion for cutting and mincing. The razor-sharp blade has a unique wavy layered design, which looks beautiful and also, according to the brand, assists with the drag and movement of the knife when in use. The blade has a whopping 34 layers on each side, providing 68 layers total of forged Damascus steel crafted from one solid piece.
