Ingredients

  • 1 medium-size red onion (about 8 ounces), shaved on a mandoline into thin, translucent rings

  • 1 medium-size yellow onion (about 8 ounces), shaved on a mandoline into thin, translucent rings

  • ½ cup packed roughly chopped fresh flat-leaf parsley (about 1 large bunch)

  • 1 tablespoon ground sumac (such as Burlap & Barrel)

Directions

  1. Toss together onions, parsley, and sumac in a large bowl. Serve alongside kebabs.
