This highball version swaps in spritz-y grapefruit soda to lengthen the cocktail and add effervescence. This cocktail's inspiration, the Hemingway Daiquiri (sometimes called The Hemingway) was invented in the 1930s at the El Floridita bar in Havana Cuba. The Hemingway Daiquiri is a riff on a classic Daiquiri which swaps simple syrup for sweet maraschino liqueur, and a touch of grapefruit. The Hemingway Highball is a lesson in balancing tart and bitter flavors with sweetness. The white rum has vanilla and caramel notes which blend well with the almond-and-cherry flavors in the maraschino liqueur. These sweet ingredients are contrasted by the freshly squeezed lime juice and bittersweet grapefruit soda.
