This cutting board can be a bit cumbersome to wash (as all oversized cutting boards will be), but it’s not impossible. How We Tested Cutting Boards

In our tests of 70 cutting boards, we tested dozens of oversized cutting boards that differed in material, shape, and size. Some were flat surfaces for cutting, while others featured additional user-friendly features like a perimeter juice groove, non-slip feet, or integrated handles. Each oversized cutting board was assessed on a variety of different elements and features, including:

  • Design: When assessing the design of a piece, we paid close attention to the condition the board arrived in, taking notice of any poorly sanded spots or imperfections. We also noted design features that helped a board stand out from the pack, like a beautiful grain of wood, a hefty weight, or a smart design feature. 
  • Performance: The performance of the cutting board was a top priority and one we assessed by utilizing the boards during everyday cooking tasks, including chopping fruits and vegetables, prepping meat, and preparing pigmented and fragrant foods. We paid close attention to how it felt to use each board, noting whether the piece slid about the counter or dulled our knives while chopping. 
  • Versatility: During our testing, we also assessed the oversized cutting boards for versatility, including whether they would be well-suited to tasks beyond meal prep, such as plating up poultry or styling a charcuterie board. 
  • Ease of cleaning: We paid close attention to whether the cutting boards held onto food stains or flavors and how easy they were to clean. Many boards were also fairly hefty — especially the wooden picks — with the heaviest weighing 15 pounds. That said, weight isn’t a factor for everyone, and you can find great oversized cutting boards made from plastic (like the OXO option on our list) that don’t weigh much at all.  

Material

The material of your cutting board is another major consideration when shopping for an oversized option. Many chefs prefer a wooden cutting board, primarily for its antimicrobial properties and gentle “give” on knives. Though it made for an interesting design feature, we didn’t feel it impacted the board’s performance. Shape aside, this board performed well in our testing, offering plenty of surface area for meal prep. It did show more knife marks than other boards we tested, which led us to dock it a few points. 


Hayate Yoshihiro Hi-Soft High-Performance Cutting Board ($130 at Amazon)

Unlike the many wooden cutting board designs that made our list, this oversized board is made of a unique synthetic material designed to minimize stress on your hand and your blade as you slice and dice. We loved how easy this piece was to carry about the kitchen with its lightweight design and integrated handle. It also responded well to daily use, rarely showing significant damage from knives or other cutlery. The main downfall? This board is expensive, so it’s best for home chefs with equally expensive knives who want to protect their investment. 

What Didn’t Make the List

Our goal is always to bring you the best kitchen products which means we, unfortunately, had to leave some oversized cutting boards on the chopping block. Several pieces — including Wustof’s TPU Cutting Board and Material’s Angled Board — didn’t earn high enough marks on all our criteria, either because they didn’t offer enough surface area on which to prep, were too slippery on the countertop when chopping, or held onto stains and odors after washing.
