Our second festive based dinner menu tonight at @theacademybistro I managed to get some photos before the start of service. The menu was as follows: Pea and Parsley Arancini with Spiced Tomato Ketchup Chicken, Ham and Black Pudding Terrine with Mustard Mayonnaise, Pancetta, Pea shoots and Pickled Wild Garlic Buds Trout Pastrami Taco with Red Onion Pickle, Lime Creme Fraiche and Coriander Turkey Schnitzel, Hasselback potatoes, Slow cooked carrot, Creamed shredded sprouts and Sage and Green Peppercorn Sauce Whipped Chocolate Ganache, frosted pistachios, orange, Chocolate Pastry disc, Orange star anise and vanilla ice cream, spiced orange syrup and Chocolate Tuile Frangipane Mince Pie Fermented Tomato and Basil Oil Focaccia A huge thanks to the HNC Professional cookery students for the prep and service tonight.
