Low Glycemic Index Breads, fortified with Dietary and Prebiotic Fiber for Arihafoods Private Limited Innovator: Mr. Amit Vaishnav, is a graduate Mechanical Engineer from the Maharaja Sayaji Rao University, Baroda (Vadodara, Gujarat), batch of 1982. Background for Innovation: 1. More than one in three Indians are Diabetic 2. More than one in three of the younger generations have their weight above average or are obese. 3. Most people eat “Junk Foods” regularly 4. Most processed foods are high on calories, fats, carbohydrates but are very low on Dietary Fiber 5. Consequently, most people have impacted digestive disorders and suffer from frequent consumption of these foods. Technology: The Innovator has been responsible for the pioneering innovations and process patents in the 90’s of: 1. Ultra Low Water Activity – a formulation process by which the water activity of the product is brought into acceptable levels. 2. Very High Pressure, Temperature and Time – a process by which we can process foods. Innovation: The Bread is formulated with ingredients that result in the final Glycemic Index (GI), which is indicative of how much and how fast the blood glucose level would rise / peak in the blood after consumption. The flours selected in the formulation have their GI within the mid-range of 50’s GI. The formulation does not have any added sugars, starches, carbohydrates which can contribute to the total GI score. To improve the consumers “Gut Health” – the product formulation is fortified with addition of Crude Dietary Fiber as well as Prebiotic Fiber, this to the extent of providing almost 30% of the day’s requirement of Dietary Fiber in one 100g Low GI Bread Loaf. While the baked Low GI Breads have the moisture in control in terms of the water activity – the product needs to be protected for preservation / longer shelf life. To enable this – the breads are packed using the Modified Atmosphere Packaging Technology and using a suitable packaging material that does not allow the ambient air / oxygen from getting into contact with the product to cause any microbial spoilage. The 100g “Meal Substitute” Low GI Bread Loaf provides just about 200 kcal in a Low GI format as being fortified with 30% of the day’s requirement of Dietary Fiber, the consumer does not experience any hunger pangs for up to 4 to 5 hours after consumption. In addition, the fortification of Prebiotic Fiber improves the Gut Health. Regular / daily consumption of the Low GI Bread Loaf as a Meal Substitute for minimum 1 meal per day will not only improve overall and gut health but will also help the consumer loose 2 – 3 kgs of weight per months during the initial months till the body stabilizes its dietary functions. The average increase of the Blood Glucose measured one and half after the consumption showed an increase of an average of 66 points as against an acceptable 120 units. Papdi Chaat Recipe Course: Snack Cuisine: North Indian Prep Time: 30 minutes Total Time: 30 minutes Servings: 8 (4 Plates) Calories: 430 kcal Author: Kanan Ingredients: For Yogurt Mixture: 1 ½ cups Plain yogurt ½ tablespoon Powdered sugar (Confectioner’s sugar or icing sugar) For Spice Mixture: ½ teaspoon Black pepper powder 1 teaspoon Red chili powder ½ teaspoon Chaat masala 2 teaspoons Roasted cumin powder 1 teaspoon Black salt (Kala namak) Toppings: 50 Papdi 1 cup Boiled chickpeas (chole or kabuli chana) 1 cup Potatoes boiled, peeled and cubed ¾ cup Green chutney ¾ cup Meethi chutney (Tamarind date chutney) ¾ cup Nylon sev ¼ cup Cilantro or coriander leaves finely chopped ¼ cup Pomegranate arils optional for garnishing Instructions: Prep Ahead Of Time: Chickpeas: requires 8 hours soaking + Instant pot cooking (Manual 15 minutes) OR stovetop pressure cooker (1 whistle on High + 20 mins on low). Green chutney: takes around 15 minutes. Tamarind date chutney: takes around 30 minutes. Boil potatoes: Instant pot (Manual for 8-10 minutes) OR Stovetop pressure cooker (steam cook for 1-2 whistles). 1. Take yogurt in a bowl, and add powdered sugar. 2. Whisk until yogurt is smooth and it should have a pourable consistency. 3. Cover the bowl with plastic wrap and keep it in the fridge until needed. 4. Take all the spice powders (black pepper, red chili powder, chaat masala, roasted cumin powder, and black salt) in a small bowl. Mix everything with a spoon. 5. Break 12-13 papdi into 3-4 pieces and make a single layer on a plate. 6. Sprinkle boiled chickpeas (¼ cup) and potato cubes (¼ cup) evenly on top of papdi bed. 7. Sprinkle the prepared spice mixture generously (around ½ teaspoon). 8. Drizzle around 2 tablespoons of green chutney and 2 tablespoons of tamarind date chutney on top. 9. Drizzle around ⅓ cup of the yogurt mixture. 10. Drizzle 1 tablespoon of green chutney and 1 tablespoon of tamarind date chutney. 11. Sprinkle around ¼ teaspoon of the spice mixture. 12. Sprinkle around 2-3 tablespoons of sev on top. 13. Garnish papri chaat with freshly chopped cilantro (1 tablespoon) and pomegranate arils (1 tablespoon). Notes: 1. Take given measurements for chutneys and topping as a guideline. You can increase or decrease the amount as per your liking and preference. But be generous on yogurt here. 2. Reduce your prep time by using store-bought items, such as ready jars of green chutney and meethi chutney. Also, get a can of chickpeas instead of soaking, and boiling at home. 3. Also, use a store-bought packet of papdi. 4. Keep all the components ready a day before and store them in the fridge. So right before guests arrive, you’ll just have to assemble a platter of papdi chaat. Keep the serving spoon small plates, and spoons and let guests help themselves. And don’t worry, store-bought papdi won’t turn soggy and soft for at least 30 minutes.

The 80/20 rule seems to work everytime In a catch up call with a senior colleague I have come to respect so much in this industry, he mentioned he manages 4 distributors in his region and out of this 4 distributors, 2 haven't made any purchase since Jan,2024 The moment he mentioned that, my thoughts were that, he would be struggling with meeting he's area sales target Surprisingly, he mentioned the least monthly performance this year so far was a 92% target achievement How was he able to do that? He simply focused on the 2 customers, made a case of expected growth with additional investment and paid much attention to them, this has grown their business over 200%, specifically, growth in revenue, rebate earnings and territory coverage, whiles maintaining variable cost by instituting depots to curtail distribution, now that is innovation Key take out from our conversation was, focus on customers that are willing to grow to get the best out of them #commercialmanager #innovation

Being a traditional industry dealing with a natural commodity it’s difficult to maintain product uniformity. I think through the wise use of technology we can streamline the industry with an end-to-end solution for problems, create transparency and reduce the challenges faced (like rice pricing, rice adulteration and quality checks-area of concerns worldwide) by people at various levels of the supply chain. INDIA : International Trade VS Trade Balance Policy …. Always there is big noise everywhere when there is big production because we do not have post harvest system optimised and similarly there is a big noise when we get low production.So,where is the solution ? Shouldn’t we have right data to have a clear understanding about the crop cover and estimated production and further plans for market intervention to address the possible challenges or plan for market access development. Accordingly,can’t we have a well defined , well researched trade balance policy along with the preparedness to address the situation which often emerge either due to glut or due to shortage . “PO Factor” ( Potato & Onion factor) often gives sleepless nights for policy makers and the agencies involved in addressing the value chains but they are used to it even after having the experiences of political turbulences . We wake up and make the efforts to export when we get glut situation and by the we are through with the expenditures for identifying the markets , the situation gets back to normal and outcome is “good experience of few domestic and few foreign market travels” . We also wake up when there is a shortage and after a big noise,we start preparing for the import and by the time we get our channels ready,the next crop comes and we again go into hibernation. Our beloved and popular Prime Minister is back third time and I am sure that some attention will be paid to this issue .May our luck shine !
