In our distillery cellars, we have some unusual wood types seldom seen in whisky production. We call them our Funnies, our exotic casks. We’ve matured spirit there in Cherrywood, Chestnut, Acacia, Mulberry and even Andean oak. When we launched our Deconstructed Farm Tasting Sets the other week, we naturally kept a few back in case we had to replace any that might have been damaged in transit. Happily they all survived intact – which means those last nine are still available.
