As many talented people there are in this world - you can't interview worth a damn. Managers love hiring talented people and often look for a stand out characteristic or personality trait that can be advantageous to making their bar or restaurant better. It's great that you may know 150 of the most ordered cocktails but it really isn't worth much if you're incapable of moving through the service well with speed or holding the ability to talk to a guest.
