Groundbreaking biosolution allows cheese producers to spice things up With the launch of our new SpiceIT® M100 biosolution, we are introducing the world’s first microbial lipase, which creates flavor notes and intensity closely resembling those of animal lipases. “This is the first microbial enzyme used for the development of butyric notes in cheese without any of the soapiness from traditional microbial lipases and even animal lipases.
