Panelists discussing the "Creating a More Sustainable Food System" panel were: • Christina Smith Marion of Ketchum’s Food, Agriculture & Ingredient team • Ashley Hartman of Bluestein Ventures • Tyler Strom of Illinois Agri-Food Alliance • Beth Conerty of the University of Illinois Urbana-Champaign Fermentation Agriculture Biomanufacturing (iFAB Tech Hub) • Loula Merkel of COMET BioSciences Among the highlights of the discussion • Strom is a farmer and, among other projects, is working on a grant similar to our Capacity Building Initiative, which will focus on climate-smart capacity-building • Merkel’s company imports straw from Denmark to create fiber which can be added to food • Panel moderator Alan Reed, Executive Director of the Chicagoland Food & Beverage Network, pointed to consumer marketing data saying people want to buy products made using regenerative agriculture practices, but don’t want to pay extra. • Reed also said Quaker Oats, a Chicago-based corporation, imports oats from Norway to meet supply chain needs. The network plans to hold more discussions on sustainable and conservation agriculture with people working in Chicago’s consumer packaged goods industry. The fight against cultivated meat feels like another front in the culture wars, turning dinner plates into political battlegrounds. Instead of focusing on what's best for consumers and the environment, some politicians are trying to score points by clinging to outdated ideas. Cultivated meat offers a chance to revolutionize the meat industry, reducing its environmental footprint and potentially offering new and improved meat options. Blocking this innovation because it disrupts the status quo is shortsighted.
