Leaving food out at room temperature is a big food safety penalty. Bacteria that can cause foodborne illness will start to grow to dangerous levels in the range of temperatures between 40°F (4°C) and 140°F (60°C). If the food is not being kept hot above 140°F or cold below 40°F, it should only be out at room temperature for 2 hours (or 1 hour if being served outside in temperatures over 90°F/32°C). When left out for over two hours, bacteria are doubling in number in as little as 20 minutes. This range of temperatures is called the Danger Zone. To avoid foodborne illness, keep cold foods cold and hot foods hot. Cold foods should be kept under 40°F. Caterers, as an example, are recommended to nest serving dishes of food in bowls of ice on the buffet table. Hot foods should be kept above 140°F. A preheated oven, chafing dishes, preheated warming trays or slow cookers can be used to keep food hot.
