“It’s easy to think about making a profit without thinking about your people and planet” ~ Danny Pecorelli I had only intended on attending Day 2 of International Confex until I heard Danny would be the 1st talk of Day 1 on the Sustainability Stage. I've followed the ESG journey of his luxury hotel group, the Exclusive Collection and was keen to hear his insights. ESG JOURNEY Danny's talk was filled with authenticity and passion for how his small luxury hotel group had approached ESG to become a B Corp. With a score of 80.3, Danny underlined their focus upon continuous improvement with an aim to score nearer 90 on their reaccreditation... “It’s about a direction of travel for us…. and it’s important to have integrity and be clear about where you are doing well.” This was a treasure trove of ingenuity and innovation around thoughtful and impactful hotel operations, including; • 80% of kitchens migrating from gas to induction from renewable electricity • sequestering carbon on their estates • turning cooking oil into biofuel • delivering food waste via a partner to local communities • using seeds and waste of grapes for ingredients in beauty products • giving consumers the choice of more sustainable local f&b options , such as sparkling wine & apple juice On this latter point, when Danny and his team started selling English sparkling wine, they sold 3,000 bottles and 12,000 bottles of their house Champagne in year 1. Last year, they sold 17,000 bottles of English sparkling wine and 6,000 bottles of Champagne. Whilst the total sales increased, Danny was illustrating how they have subtly shifted consumer behaviour - through choice - to create a more positive impact on carbon footprint. An example of how you don't need to compromise on luxury in order to be both profitable and sustainable. lean 6 sigma is a great way to look at waste. one 5 star park lane hotel was doing it nigh on20 years ago!!
