Should we rethink cocktail GP expectations and prioritise money in the till? Traditionally, GP has been set at 75% for cocktails (or more) - established years ago primarily due to labor requirements. The problem with just continuing to apply this mindset - is that we continue to narrow the market size of who can afford a cocktail (let alone a reorder), as cost bases increase. Let's ideate a scenario to put more money in the till (at a lower GP): > Customer A: hand-builds or batches Espresso Martinis on-site for $3.50 per serve, achieving an 80.7% GP, and sells them for $20.  > Meanwhile, Customer B: buys a pre-batched keg of Espresso Martini, costing $4.45 per serve with a 72.7% GP and sells them for $18. Now in this example Customer B, who was previously selling 50 Espresso Martinis per week, now sells three pre-batched kegged Espresso Martinis for every two hand-built ones, driven by: > increased demand at that price point > higher output during peak service > quality and consistency. Over 12 months: > Customer A's net margin sits at $38,172 > Customer B's net margin sits at $46,463 > A remarkable 21.72% increase, despite a 8% lower GP per serve. What’s exciting is the above example is it's not unrealistic, as we have seen our own customers experience even better financial outcomes (without the additional labour requirement). In short, GP can be reduced, and net margin increased - if you have the right high quality product and strategy to unlock greater volume. Our latest Market Watch report reveals some interesting trends in the hospitality industry. Draught Beer & Cider volumes have shown a slight improvement, slowing the decline to -3.8% year to date, a positive shift of +0.8% from April. Notably, World Lager (+13.4% YTD) and Stout (+4.9% YTD) are driving growth, while Premium Lager (-14.9% YTD) and Core Lager (-7.6% YTD) continue to decline. Rene shared valuable insights into the company’s strategic growth and market expansion. Overseeing operations and marketing for Chatrium Hospitality, Rene provided an in-depth look at the company’s recent developments and future plans. Chatrium Hospitality comprises two brands: 1. Chatrium Hotels and Residences 2. Maitria Hotels and Residences. Maitria is a relatively new addition to the brand portfolio, signifying the group’s expansion and innovation in the hospitality sector. ◽️Expansion and New Developments When Balmer joined Chatrium Hospitality five years ago, the company had six properties, including notable establishments such as Chatrium Riverside and Emporium Suites. Today, the brand has significantly expanded its footprint. New management contracts have been added, including Maitria Mode and Chatrium Niseko in Japan. The latter represents a semi-management contract, reflecting the company’s partial ownership stake. Looking ahead, Chatrium Hospitality has ambitious plans for further development. The group recently signed a new property in Vietnam with 1,200 keys under the Chatrium Grand brand. Additionally, a new 320-key property is set to open in Phuket’s Rawai Beach. The pipeline also includes projects in Shanghai with 340 keys, a full villa project in Mai Tao, and another 140-key property in Samui. ◽️Focus on Real Estate and Market Expansion Balmer emphasized the company’s dual focus on hospitality and real estate, managing various residences alongside their hotel properties.
