The concept of RevPASH was actually inspired by a similar metric used in the airline industry called Revenue per Available Seat Mile (RASM). Was first formally introduced in the hospitality literature by Cornell University’s Quarterly Journal. How it is calculated? Agis’ Q4 nut report notes an improving outlook for almonds, pistachios, and walnuts. Walnut and almond acreage continues to shrink in response to unprofitable margins. Pistachios show more young plantings coming online. But planted acreage for all three nuts is expected to contract as SGMA water restrictions take effect; a lot of older nut plantings rely exclusively on groundwater in critically over drafted basins, and will have to be pulled out. A double earnings/sales beat, raised guidance in many meaningful categories, and new product new news for CAVA makes for a great quarter. In fact, very few other brands--only a handful-- are doing as well. A new brand regarded as cool by guests and employees and the right kind of executive management and food has been evident for years now. The IPO seems to have supercharged attention and momentum. The discussion about the calendar adjusted SSS and traffic and the two year stacked SSS number warrants a note. While the 10Q P&L necessarily focuses on change from prior year, we are almost certainly wrong focusing on that number. We as an industry can and must spend more time on 2 year and even five year stacked numbers for better MD&A. CAVA did today. Their disclosure changed the tone. Thank you Brett Schulman.

For years restaurants were told by experts that your ideal Cost of Goods Sold (COGS) should be 30% of revenue. However, our very own Jacob Namrow has done groundbreaking research, combing through the Department of Agriculture's, the National Restaurant Association's and the Bureau of Labor's statistics to give an updated perspective. Today, restaurants are spending 10% more on their COGS. That means 40% of sales are going to COGS. 2023 saw, non-alcoholic beer, wine, and spirits sales over $565M. That’s a 35% boost in dollar sales vs. the year before—but who’s buying these options? Gen Z is leading the trend in the sense that they are opting out of drinking alcohol. However, they are not the demographic purchasing off your NA menus. So, who is buying? Mostly women ages 34-55. They are looking for products that provide inclusivity. They want to participate in celebrations and feel included in social gatherings with their friends and loved ones. According to NIQ’s 2023 Consumer Outlook, 46% of consumers identified physical or mental wellness as one of their top priorities. And, with 47% of Americans having at least one of three risk factors that contribute to heart disease, it’s no surprise that consumers are increasingly seeking beverages that do more than just quench thirst. Healthy, low sugar options are being requested. Sober October is coming. Some interesting stats came out of a Employment Policies Institute survey Out of the 182 limited service restaurants (fast food) surveyed in California 98% of restaurants raised menu item pricing & 93% plan to do so next year 89% reduced the number of employee hours & 87% plan to do so next year 70% made staff cuts or consolidated positions & 74% plan to do so next year 74% said there is a greater chance they shut down This is more of the knee jerk reaction to the increased minimum wage We will see how the industry adapts over the next few years Automation will be at the center of most LSR operations moving forward #automation #quickserverestaurants #QSR #minimumwage #kiosks
