Beetroot Berry Pancakes


Prep time: 10 mins Cook time: 1 hr 10 mins Yield: 6-8 pancakes
Beets make these pancakes a gorgeous deep red color, plus they provide tons of
antioxidants to protect against free radicals throughout the day :) Tip: Roast the
beetroots the night before while you’re eating dinner or getting ready for bed.
This will save lots of time in the morning when you’re eager to get going with your
day.
Instructions Ingredients
1. Place your oven on at 350F. Roast the 2 cups gluten-free oats,
beetroots in a little extra virgin olive oil for uncooked

is hot, pour out the batter into small pancakes. You want them about 10cm
wide and 1cm thick. Cook until you see small bubbles forming on top of the 6.

side for another 2-3 minutes. Place the cooked pancakes onto a plate and
continue with the remaining batter.
6. Add your favorite toppings. Berries, yogurt, cacao nibs, maple syrup, banana,
