10 Minute Smoked Haddock Risotto
The speediest "risotto" you'll ever make thanks to swapping out risotto rice for orzotto. This pasta-fied take on smoked haddock risotto is perfect to add to your arsenal of quick and easy dinner recipes, or even your dinner party menu roster. Everything is cooked in one pan so all the flavours get a chance to marry together in a creamy, zesty sauce, making this one of the quickest recipes yet.
Be careful it doesn’t catch or boil over as it contains milk.

Ingredients
- 250 g
smoked haddock
- 250 g
orzo
- 500 ml
milk
- 80 g
garlic & herb cream cheese
- 150 g
frozen peas
- 100 g
spinach
Lemon juice
Freshly cracked black pepper
Directions
- Step 1In a large pan over medium heat, combine smoked haddock, orzo, milk and 300ml boiled water.
- Step 2Bring to a boil then turn it down to a simmer and cook for 10 mins, stirring often. Once the fish and orzo are cooked and the sauce has thickened, stir in cream cheese, peas and spinach. The haddock should naturally flake apart as you do this. Cook for 3 mins more.
- Step 3Season with fresh lemon juice and black pepper and serve immediately.
