In this study in the Journal of Food Science, researchers aimed to create and analyze different granola formulations using a variety of sweeteners and baking methods. The researchers found that the choice of sweetener and baking method significantly impacted the granola's chemical composition. They also investigated the level of sugars, fatty acids, and phenolic compounds in the granola samples, which help optimize granola production and optimize its nutritional value.
