Another excellent blog. I'd add - though you mention it in earlier blogs - that the UK average is 12T per year (consumption basis) so a 1 - 1.5T saving is 10% of the UK average, which is pretty significant.   Re: Beef, I read somewhere that grass fed in traditional grazing systems - or other less intense ways - better than corn-fed.  That's why the US corn-fed system is particularly intense, I think - but to your point re: composting, it's not a solution as any beef is still a net emitter, but it's potentially a better choice when choosing between your steaks!
