Can the sturgeon’s cousin fulfil its farming potential?

According to the FAO, over 600 aquatic species are farmed globally. But, despite the number and variety of options, the sector is still largely reliant on a handful of salmonids, carps, shrimps, seaweeds, tilapias and catfish. However, Greg Lutz’s latest feature makes a compelling case for the culture of a less well-known variety – the paddlefish – which appears to have plenty of unfulfilled potential. Around 250,000 tonnes of paddlefish are produced annually, so it’s still very niche. But, given that global production more the tripled since 2018, perhaps we will all become more familiar with this ancient and idiosyncratic fish in the years to come.
