Xanthan gum is a popular food additive that’s commonly added to foods as a thickener or stabilizer. It’s created when sugar is fermented by a type of bacteria called Xanthomonas campestris. When sugar is fermented, it creates a broth or goo-like substance, which is made solid by adding an alcohol. It is then dried and turned into a powder. When xanthan gum powder is added to a liquid, it quickly disperses and creates a viscous and stable solution. This makes it a great thickening, suspending and stabilizing agent for many products. Did you know? 155 years ago the french chemist Hippolyte Mège-Mouriès invented and patented margarine as a reasonably priced alternative to butter. While the original recipe of the “beurre économique“ was based on beef tallow and skimmed milk, the modern version mostly consists of vegetable fats. Some products that contain hydrogenated fats and therefore trans fatty acids are criticized for potential health risks. However, butter is still the preferred fat spread, at least in Germany - with a market share of around 49 %. This is followed by margarine with 33 % and mixed spreads with 18 %. Interestingly, organic spreadable fats are the slow sellers with a consistent market share of 2 - 3 %.
