Why Running Restaurants and Bars Is Not So Different from Managing Hotels As someone with 25 years of experience operating restaurants, bars, and event businesses in one of the most demanding markets in the world—New York City—I often hear people say that running hotels and running restaurants are two completely different endeavors. I respectfully disagree. The core fundamentals of success in both industries are strikingly similar. Here’s why: • Customer Service Excellence: Whether it’s a restaurant, bar, or hotel, creating a memorable guest experience is non-negotiable. Anticipating needs, exceeding expectations, and delivering personalized service are at the heart of both industries. • Operational Logistics: Managing day-to-day operations requires precision. From supply chain management to scheduling and inventory control, the systems in place for restaurants and bars translate seamlessly to the complexity of hotel operations. • Team Leadership: Building and leading motivated teams is a universal skill. Empowering staff, fostering collaboration, and maintaining high morale are crucial whether you’re running a hotel or a restaurant. • Client Relationships: Cultivating strong relationships with guests, partners, and the community is fundamental to long-term success. Hospitality, in all its forms, is about connection and trust. • Financial Management: Budgeting, cost control, and revenue optimization are essential in both fields. Well, how many of us would agree to the fact that in hotel industry, the designations/titles are just not more than any labels. While they should have been curated to define the true essence of one’s role and the impact on guest experiences, isn’t it!! Do we not agree, redefining these roles/titles would reflect not only their specific expertise but also the artistry behind each function? Aligning roles with their true purpose, we will be able to foster a culture of ‘EXCELLENCE & PRIDE’. Have a few suggestions, such as: “Waiter & Waitress- Ambassador of Dining Experiences” “F&B Manager- Manager/Director Culinary Excellence & Guest Delight” or Manager/Director Dinning experience and Guest Delight” “Executive Chef- Master Culinary Excellence & Artistry” or “Culinary Virtuoso and Innovator” or “Chief Gastronomic Innovation” or, you might too have some to suggest!!! Are, more than welcome. I know they look a elaborated 🤔 😁 but these titles go beyond conventional labels, embodying the passion, precision, and excellence each professional delivers. Traditionally, hotels viewed their restaurants and bars as amenities for guests rather than profit centres, so hotel recruiters rarely considered candidates with commercial restaurant experience to manage food and beverage operations, preferring those with hotel training. However, as many hotels now have vibrant dining and drinking venues that attract both hotel guests and the general public, HR managers may benefit from thinking outside the box by bringing in talent from the restaurant world. Remember to lead your restaurant from the floor, not the boardroom. Ensure the communication accommodates the needs of both. Integration between PMS and restaurant systems is key. 🔑 and can’t happen soon enough. I've had the privilege of working for and with some of the top hotel brands in the world. 🌎 When I meet with a new client or perhaps people outside of the industry about what I do - the same question is always asked, "How do you actually increase service scores?" This is a big question! And honestly, the answer is simple - or at least the process is simple. There is nothing you can buy, give away, or say that would automatically increase scores in perpetuity. Danny Meyer wrote in his book - one of my top reads of all time - Setting The Table, about the power and need of setting and establishing standards. Without them, he writes, "just give away the keys to the restaurant." 🧂 If you want to improve service scores, the answer lies in your standards.
