Food Grading: what standards and words in our food mean? Ever noticed labels like "Grade A," "Prime," or "Extra Virgin" on your food and wondered what the differences are? These classifications go beyond visual appearance and represent quality assurance and consistency for the consumers. Who sets food grading standards? Government agencies: In the U.S., the USDA (United States Department of Agriculture) and other countries often have similar regulatory bodies, such as CFIA (Canadian Food Inspection Agency) in Canada or EU standards in Europe. Industry organizations: Some industries have grading systems managed by independent organizations. How does grading work? Grading assesses products based on criteria like: Appearance: size, shape, color, and uniformity. Flavor and aroma: taste and smell profiles. Texture: firmness, juiciness, or tenderness. Defects: absence of blemishes, bruises, or other imperfections. Examples?? -Meat: The USDA grades beef into categories like Prime, Choice, and Select based on marbling, tenderness, and flavor. Prime cuts are preferred for grilling, while Select may work better in slow-cooked dishes. -Fruits and Vegetables: Apples, for example, are graded by USDA as Extra Fancy, Fancy, No1 and Utility. Some are from one variety and are uniform in size, free of blemishes, and have vibrant color. Lower grades may have imperfections but are perfectly good for cooking or juicing. -Eggs: Graded as AA, A or A, with AA having the best yolk and albumen quality. -Olive Oil: Graded by the International Olive Council and other regulatory bodies: Extra virgin olive oil (EVOO): The highest grade, with low acidity (<0.8%) and no defects, offering a fresh, fruity taste. Virgin olive oil: Slightly higher acidity (<2%) and minor defects but still good for consumption. Refined olive oil: Lacks flavor complexity due to chemical processing, often blended with virgin oils. Pomace olive oil: Extracted from olive pulp and typically used for industrial purposes. Mold-resistant bread is a result of scientific progress, not danger. --------------------- In recent times, you may have come across discussions online questioning why bread today seems impervious to mold, unlike its predecessors. Some argue that this resilience is a sign of unnatural additives or chemicals in our daily bread. As a microbiologist well-versed in food production, particularly bread-making, I feel compelled to shed light on this misconception. Let's address the core factors governing mold growth on bread. First and foremost, mold requires specific conditions to thrive: presence of spores or a vegetative state of mold, conducive environmental factors such as temperature and moisture, nutrients, appropriate pH levels, and the absence of inhibitory substances, like preservatives. Historically, traditional bread-making processes inadvertently facilitated mold growth. From the mixing of various yeast strains, including wild ones, to human handling post-baking, and the variability in moisture content, old-fashioned bread provided ample opportunities for mold to flourish.
