Can we Solve the Problems in Food with Alternatives? That’s the question. And it seems like we can. Riccardo Bottiroli is one of these pioneers working within the field of alternatives. Mixing old food traditions with new ideas to make what we eat better for the planet. In Italy, where keeping to the old ways of making food is important, Riccardo is finding new ways to make our favourites without harming the earth, especially chocolate, which faces big problems like not having enough cacao because of climate change and child labour. Making a new kind of chocolate without cocoa (with Foreverland Food). This isn't just about making a new tasty treat; it's about helping our planet by finding better ways to grow and make our food. But it's not easy. Making new foods that are good for the environment and taste good is tough. Figuring out how to keep the chocolate tasting great without using cacao and how to make enough for everyone without hurting the earth. On top of that he has experience working on other alternatives from lab-grown meat to plant-based patties. But we, as professionals, we need to understand it, at least for ourselves. For me, food is most essential element to accomplish any change in the world. Food is a basic pillar of every society. How we structure our lives, how we connect with people, how we build cultures... Starts, ends or goes through food in some sort of way. That is why we shall not forget the power ir has to change the world.
