I chatted a few weeks ago with Peter Newlin about how Gastamo Group is developing distinct casual concepts in Colorado's suburban areas, and he made a few points about design and experience that I've been thinking about ever since. Just listen to Peter in the clip below about how little details like what sound system you choose and the playlist you build can have a huge impact on the guest experience. The full conversation is well worth the listen for any restaurant leader hoping to distinguish their concept through design and experience. I love listening to experts talk about their perspective on the guest experience. With the influx of tech over the last five years (and the little thing called COVID), I feel like the industry as a whole as put the guest experience on the back burner in favor of making the restaurant more efficient. But when you listen to someone like Peter Newlin describe the story of one of their restaurants through the lens of personification, that’s truly magical. That’s what hospitality is all about.
That traveling lady sounds like a cool lady
I miss designing sound systems for those concepts - it is a lot of fun to work with somebody trying to create a great environment!
Was super informative and intuitive! Solid reclassification of how we typically define restaurant types (i.e Suburban Casual Dining). Thanks Sam Oches and Peter Newlin!
Love this.
Great info!
Congrats Peter!

21hSam Oches, have you considered how music shapes our dining experiences? The way a carefully curated playlist can transform a simple meal into an unforgettable moment. #RestaurantMagic
