Dining is, is really just the idea of transporting a guest, you know, taking them out of their day-to-day and and making them, you know, you know, feel something. And I think experiential dining is just delivered in the details. It's delivered in the interior design, it's delivered in the uniforms. It's delivered in the sense it's delivered in the sound. You know, the playlist, you know, we still use a DJ for every one of our playlists. And you know, I look up to so many restaurant groups that understood the importance of sound. You know, I still go into beautiful restaurants and I'm like. How do you build a two and a half million dollar restaurant and put like, you know, a $15,000 sound system in here, right It's. You know, our concepts, we do a lot of story writing and you know, for example, Perdida is the idea of being lost. It's the idea of looking for something different. It's telling the story of this beautiful lady traveling the coast of Central America and and you know, all the chachkies in the restaurant or are things that could be in her apartment like old cameras, surf magazines.

I love listening to experts talk about their perspective on the guest experience. With the influx of tech over the last five years (and the little thing called COVID), I feel like the industry as a whole as put the guest experience on the back burner in favor of making the restaurant more efficient. But when you listen to someone like Peter Newlin describe the story of one of their restaurants through the lens of personification, that’s truly magical. That’s what hospitality is all about.
