Cornell Institute for Food Systems - Synergistic Thinking, Innovative Food Solutions.

Thank you to the Cornell Upcycled Food Club for inviting me to participate in the judging for their second annual Bake-Off competition! Student teams were challenged to showcase upcycled, plant-based ingredients (generously provided by event sponsor Puratos and special guest judge Zhixin Wang, Ph.D.) to produce vegan baked treats. As always, everything we tasted was absolutely delicious! Check out the treats below! Joint winners of the Judges Prize went to Team Electric Meal (Claire Noack and Annika Madler, for their Thyme to Pretend caramelized onion and thyme scones) and Team Zesty Gals (Zoe Scott and Alaina B.rock, for their chocolate and citrus WhooBee Pies). Team Electric Meal also took home the Audience Choice Award! Congrats to all the team bakers, including Team Smoobee Swirl (April Huang, Sonia Su, and Viral Shukla); Team Holiday Elves (Christina Pitacco-Rivera, Gia Lee, Trisha Saxena, and Tiffany Situ); Team 4113 Hose on the Floor: (Ella Hsu, Bryant Kye, Milan Poland, and Michelle Kwong); Team The Fruzz: (Millicent Vizinberg-Honor and Christian Scheuermann) and last but not least Club leaders Dean Hauser and Melissa Huang for organizing!

You will have to judge some of my wife’s baking projects. One of the number of things she was trained in. This week is about 20 dozen cookies she has made for family, friends and members of our resort for Christmas. Very interesting international collection. I still see you are having fun at Cornell. Ray
