How are we feeling about salt these days? Leave your thoughts below. Thanks Kim Decker with Food & Beverage Insider for these snippets below, from a Natural Snack Products perspective.
Salt has evolved to a celebrated ingredient in #foodscience. Industry experts --Juliana Biederman, Jordan Timm at Cargill Salt and Nick Mendoza of Neptune Snacks -- highlight its nutritional value and culinary significance, as well as smarter salting strategies amidst ongoing debates about its health implications. “This era of high-inclusion, low-detection sodium in manufactured foods — where it served as a cheap and effective flavor and texture enhancer — was largely what gave rise to the war on salt,” Mendoza said. “But in the last decade or two, food manufacturers responded with lower-sodium products, particularly in the natural channel.” Kim Decker reports her latest for Food & Beverage Insider.

ARTIGOS EM REVISTAS COM ARBITRAGEM CIENTÍFICA - INIAV Coumarins in Spirit Beverages: Sources, Quantification, and Their Involvement in Quality, Authenticity and Food Safety This comprehensive review is devoted to an under-exploited family of phenolic compounds, the coumarins, and the most relevant strands in which they are involved in some spirit beverages—wine spirit, brandy, whiskey, sugar-cane spirits (rum and cachaça) and grape marc spirit—with great importance worldwide in terms of production, trade and consumption. It gathers the key discoveries on the topic, considering the production process of each spirit beverage, and the related sources of coumarins (different kinds of wood used in the ageing stage), along with the factors that govern them and can influence the sensory properties of the aged beverages. An overview of the analytical methods available for their identification/quantification is also included, as well as the corresponding trends for the advancement of knowledge in this field. Moreover, the remarkable role of coumarins as nutraceuticals, their importance as chemical markers for authenticity purposes, and their relationship with the food safety of these spirit beverages are also addressed, highlighting the current gaps and issues, and providing clues for future research. 𝐒𝐚𝐯𝐨𝐫 𝐭𝐡𝐞 𝐒𝐰𝐞𝐞𝐭𝐧𝐞𝐬𝐬, 𝐒𝐤𝐢𝐩 𝐭𝐡𝐞 𝐒𝐮𝐠𝐚𝐫 🍰✅ | IndustryARC™ Neotame Market Estimated Size (2022E) USD 15.8 MillionProjected Market Valuation (2032F) USD 32.3 MillionValue-based CAGR (2022 to 2032)7.4%. 🔹𝑭𝒐𝒓 𝑴𝒐𝒓𝒆 𝑰𝒏𝒇𝒐𝒓𝒎𝒂𝒕𝒊𝒐𝒏 https://lnkd.in/geicfHQX Neotame is a low-calorie, high-intensity sweetener that is chemically similar to aspartame but much sweeter, offering a sugar-like taste with minimal calories. It is around 7,000 to 13,000 times sweeter than sugar, making it an ideal choice for a wide range of food and beverage products, particularly those aiming to reduce sugar content without sacrificing taste. Neotame is highly stable under heat and in a variety of pH levels, which makes it suitable for use in baked goods, beverages, dairy products, and processed foods. Approved by regulatory bodies like the U.S. Food and Drug Administration (FDA) and the European Food Safety Authority (EFSA), Neotame has been extensively tested for safety. It has a clean taste profile and does not carry the aftertaste that is often associated with other artificial sweeteners. The sweetener is also metabolized differently from other artificial sugars, and it is deemed safe for individuals with phenylketonuria (PKU), a condition that limits the intake of phenylalanine, a compound found in many other artificial sweeteners.
