Since 2019, we’ve been testing the use of bread in beer production, successfully integrating it into several major beer releases. I used to suggest that making good compost is like making wine - it gets better with age. I was wrong. With composting food waste, why do I have four-week old compost that is just as mature as another 1 year old compost. Why does this 1 year old compost have a more pungent odour than my two week old compost? I explore some of the factors impacting potential odor and time to maturity. In 1998, Alaskan became the first brewery in North America to implement a CO2 recapture system, and for the last 17 years they haven't had to purchase CO2. Pretty dang cool! When you purchase CO2 from a supplier, it's usually created using fossil fuels or sourced from CO2 wells. Alaskan gets all of their CO2 - more than 1 million pounds worth - from the fermentation process, where the carbon dioxide is naturally found in the grain used to make the beer. How do we save more than 1 million pounds of carbon dioxide a year? Ferment, rinse, repeat: music to a sustainable brewery's ears. By capturing the CO2 that's created from our fermenting beer, we haven't purchased carbon dioxide in more than 17 years. Re-utilizing the naturally-produced carbon dioxide also allows us to save more than 1 million pounds of CO2 a year. It's all part of our Beer Powered Beer® program, which is geared to decrease our carbon footprint as much as we can. Curtis Holmes, your favorite plant manager, is here to walk through our carbon recapture system, which has been in place at the brewery since 1998.
