Love distilleries willing to experiment with different wood casks. Is it full juniper or a juniper hybrid? I know that oak fiber structure being optimum for whisky maturation, however there is a push for "out of the box" wood grain and flavour profiles.
Juniper is an endangered species in Scotland and rarely grow big enough for barrel making here. We should be planting more here.
Not certain about this. It might give too much of an earthy and 'herbal' note , especially with such small casks. But dying to find out! If the experimentation does not give optimum results, the whiskey can always be used in a boulevardier!
