A new paper, "The Dairy Matrix: Its Importance, Definition, and Current Application in the Context of Nutrition and Health," has been recently published in the scientific journal Nutrients MDPI. This paper emphasizes the concept of the "dairy matrix," which highlights that dairy foods are more than just the sum of their individual nutrients, with their structure and interactions playing a key role in contributing to important health outcomes. This publication exemplifies a remarkable international effort brought together by the International Dairy Federation (IDF). The culmination of our methods that has brought carbohydrate analysis to the modern age is published. These methods, described in great details, provide a deep and comprehensive structural analysis of carbohydrates that was not possible until recently. They are being used in our laboratory and in many of our collaborators' laboratories to understand the role of carbohydrates in diet and health. We are thrilled to share our recent adventures on the West Coast with you all! Leila Strickland, PhD, and Amy Kiska had the opportunity to participate in two exhilarating events: the Human Milk Institute Symposium at UC San Diego and Future Food-Tech San Francisco! Future Food-Tech kicked off with an enriching discussion led by panelists Isabelle Esser, Stacy D., Matthew Walker, Vincent Martin, and David Lestage. Together, we explored holistic strategies for addressing global food and nutritional insecurity while specifically highlighting the need to enhance children's nutrition. We were particularly struck by the emphasis placed on gut health and the microbiome, especially concerning early life nutrition. In a panel discussion on "Getting Gut Health Right", Stephanie Culler from Persephone Biosciences illuminated the alarming prevalence of gut deficiencies in infants, underscoring their lifelong implications for gut health. Setting humans up for lifelong nutrition is a priority at BIOMILQ - we emerged from these conversations invigorated and deeply committed to our role in driving impactful change through innovation. In essence, Future Food-Tech underscored the undeniable truth: the future of food and nutrition relies on robust partnerships and collaborations among companies united by a shared vision of fostering a healthier food system for both people and the planet.
