For the #WhiskyLovers in #HongKong This 1988 Vintage 35 Years Old from the Bunnahabhain Distillery is a special bottling by Whisky Antique (Silver Seal) from a Single Cask #1024. Matured in a Sherry Cask for 35 Years and bottled at 46.5% this release of 60 bottles has a special label designed by The East Asia Whisky Company under the Manta Ray Genesis Edition. The label captures the silhouette of a majestic Manta Ray made visible by the dark emerald and frigid pink clouds that emanate from its dotted pattern radiating in the colors of the marine environment it inhabits. Rated 92 Points / 5 Stars by WhiskyFun and awarded 98 points IWSC. Very limited stock available. Whisky Fun Extract: Colour: mahogany. Nose: this is more old-school than the House of Lords. Not talking about the Scotch whisky. Prunes, old cognac, dates, chocolate, figs, whiffs of moss and old pine wood, a few mushrooms and a little liquorice, plus a few roasted nuts, especially pecans. Mouth: we're deeply reminded of some old Speyside malts by G&M. Like pre-war, bottled in the 1970s and 1980s. It is a time machine! More bouillons, chocolate, pipe tobacco, liquorice, truffles, puréed chestnuts, pears poached in Sauternes, very old Sauternes, very old Malaga… It is definitely very 'antique'. I would love to watch young whisky enthusiasts tasting this whisky, or similar whiskies, for the very first time. It would undoubtedly be a real revelation, as they are becoming so rare. Finish: rather long, rather sublime to tell you the truth. Comments: as I sometimes say, we could spend hours sipping a magnum of each to try, and fail to decide which one, between the Kinship and the Silver Seal, is our favourite. "There are only two types of spirits in the world, one from a pot still and one from a column still." 😎 The still has been described as the heart of every distillery, providing the great clean for the production of incomparable whisky. 🧡 🧡 🧡 Types of stills: whisky stills have into two main categories: pot/column ①: Pot stills are all similar in shape, but the different shapes and the refluxes during distillation process can have a significant impact on the style of whisky. The difference in shape, length and curvature of the 'swan neck' is one of the most important reasons for the distinctive flavors. Classification: A tapered neck is called a "wide neck" if there is no neckline, or a "lampshade" if there is a neckline. The ball-shaped neck is called the "Boiling Ball Style". Characteristics: Pot stills can only carry out a single distillation, so they can retain more of the various flavors produced during the fermentation process, and the texture of the new wine comes out on the mellow side. Between each distillation, must be emptied, cleaned, refilled these steps, low efficiency and purity are often difficult to ensure. ② Column Still, also known as Coffey Still. capitalists in order to make up for the inefficiency of the pot "defects", the tower was born in the 19th century (knowledge: an Irish official named Inez Coffey invented) Characteristics: 24 hours a day, all year round, very efficient distillation, stable output of high alcohol concentration and high purity. The spirit also lacks its own personality because it is so clean.Compared to pot stills, continuous stills produce a lighter and purer style of spirit, and are used by many grain whisky distilleries. Although whisky is distilled for a much shorter period of time than it is matured, no one would argue that whisky distillation is an irrelevant process. Description of a Champagne Wooden Barrel. The barrel is exclusively made from French oak, which is preferred for its fine grain and subtle influence on the aging process. Typical Champagne barrels, also known as "pièces", are often around 205 liters, although other sizes can be used. After aging Craft, Artisan Champagne, the interior of the barrel will be stained with the lees (dead yeast cells) and wine residue, leaving a creamy, yeasty scent. The main grape varieties used in Champagne production are: Chardonnay: Contributes acidity, finesse, and longevity. Pinot Noir: Adds body, structure, and red fruit flavors. Pinot Meunier: Provides fruitiness and roundness. When Aging Single Malt Whisky in a Used Champagne Barrel The whisky inherits subtle fruit notes, such as apple, pear, or citrus, from the Chardonnay and Pinot Meunier residues. Brioche and Toast: Yeasty, biscuity aromas reminiscent of brioche or toast from the lees may impart complexity to the whisky. The mouthfeel of the whisky might become creamier due to the influence of the Champagne lees. The oak would have already given some of its tannins and vanillin to the Champagne, so the whisky might experience a softer oak influence, contributing to a more delicate mouthfeel and subtler tannic structure. The Champagne barrel will impart a slight acidic or mineral note to the whisky, adding a fresh, crisp edge that is unusual in typical whisky aging but can be intriguing. Depending on the level of toasting and the previous use, the whisky might take on a pale golden hue with possible hints of the Champagne color residues. We always work really hard to bring you a diverse range of interesting and tasty things but this time we really think we've nailed it, and we hope you agree! Tamnavulin 2010 - Small Batch - Ruby Port Finish. A bourbon barrel and a half of Tamnavulin that we married together in a Ruby Port pipe to give a richer, and considerably pinker experience. Glasgow 2017 - Single Sherry Cask. Despite living in Aberdeenshire for nearly 20 years, Andrew still thinks Glasgow is his home city. Rather than correct him we've allowed him to indulge in this sensationally good value sherry bomb with maybe our favourite label of the year. Un autre Petit Chien Brun, l'encore. One of our very first releases was a stunning 1993 single cask cognac, errr we mean French Brandy. Well, here's another 1993 single cask early landed, late bottled 30 year old cognac. Our way of saying cheers, or santé to our customers. This one is an exclusive on our website as there wasn't enough to go around. It's also incredible value. Very Secret Speyside 1998. A very specially selected single barrel single malt. What does very specially selected mean? Well it's code for more expensive. This cask came to us as part of a large parcel, it was the most expensive cask we'd ever purchased, we did consider what to do with it, bottle it or move it on. But we fell in love at the first sip and really couldn't pass the opportunity to bottle something so special, so tasty and although age is just a number, our oldest single malt to date. Last and definitely not least, Highland Park 2014, random barrique. This was supposed to be a hogshead, it wasn't. We know it's a barrique, but that is all. It's a pleasant surprise though even for bottlers inherently wary of red wine casks! Orcadian magic with a French twist. As independent bottlers, our job is different from the distillers. While they seek consistency, an incredible skill in its own right, we are on the search for the curiosities, the little jewels amongst casks and the real stand out drams. This cask was a little jewel, a little barrique shaped jewel. And if you thought our Kyro cask label was hard to read, wait until you see this one!
