❓ What does camembert cheese, tempeh, and sake have in common? 🍄 The answer is mycelium, a network of white fungal threads or hyphae structure. We attended a webinar, organized by Vidacity, on the topic “Fascinating World of Mycelium – Future of Sustainable Food Production” by Dr Yashaswini Balaraju, PhD Balaraju. We learned that one thing is certain: The future of food is ripe with opportunities for mycelium, given its unique properties and potential for innovation. 👩🌾 Food systems are currently responsible for around one-quarter (26%) of global greenhouse gas emissions. However, producing 1 kg of protein from mycelium takes only 76 liters of water and produces only 0.25 kg of CO2—as compared to beef that requires ~6,800 gallons of water and causing the emission of 15 kg of CO2. Mycelium could have two primary applications in our food systems: 1️⃣ Plant-based food ingredient: Being rich in amino acids, mycelium can be key component in many plant-based meat products, offering a sustainable and nutritious alternative to animal proteins. The special texture and flavor profile of mycelium can be used to enhance or diversify the sensory qualities of foods. It can also add a meaty, umami, or even sweet flavor to vegetarian and vegan dishes. 2️⃣ Functional food: Mycelium is rich in compounds such as beta-glucans, which have immune-boosting, cholesterol-lowering properties, and other bioactive substances beneficial for gut health and overall wellness. 📣 Nature's Fynd, Mycorena, now part of NAPLASOL, and Mycovation are some examples of companies using fungi-based alternative proteins.
