Simple veggie forward meal that is on the table in less than 30 minutes! This is what REAL FOOD looks like...even the slice of toast on Jose's plate! It is a piece of sourdough bread with 4 ingredients from a local bakery, not the franken-breads that are sold in supermarkets. You know the ones...the loaves that can sit on the shelves for weeks and weeks on end and won't get hard or go bad! What would you prefer – A longer shelf life for your food, or a longer life for yourself? We’re living busy lives, we are always on the go. So, off-the-shelf quick foods seem like our savior. The convenience has overpowered so much that these days processed foods provide 25-60% of a person’s daily energy intake. Imagine: Breads, Instant noodles, Packaged drinks, Breakfast cereals, and Ready to cook frozen meals. These might be saving us time in the short run. But, it’s a shortcut to an unhealthy future :) Stop and think what are we putting into our body – Sugar, sodium, saturated fat, preservatives - All in high quantities. Studies have shown that 4+ servings of these processed foods daily increases overall death rate by 18% per serving💀 And here’s my question – Wouldn’t you rather spend an extra 30 mins a day in the kitchen if that meant a longer, healthier life? There are so many healthier - lower shelf-life - foods to try instead: ☑️Roti, daal and veggies ☑️Vegetable soup ☑️ Freshly cut fruits ☑️Fresh fish or chicken dishes ☑️Porridge, poha, upma ☑️Veggie omelettes ☑️Yogurt Your naani was right when she said fresh foods were the best foods. Listen to her, and you’ll hopefully be able to pass on the message to your own grandkids!❤️ PS: If the ingredients list on a food item sounds like they belong in a science lab, not your kitchen, that’s probably a red flag!🚩 PPS: Also be mindful of how your meat, fruits and dairy products are sourced. One of the easiest and most flavorful ways to cook veggies is by roasting them in the oven at a high heat (400 degrees). You can use any veggies you like- such as cauliflower, butternut squash, carrots, radishes, brussel sprouts, potatoes, peppers, onions, etc. The options are truly endless. My go to recipe is to toss all the veggies in avocado oil or melted ghee, 2-3 heaping tsp of whole grain mustard (or dijon), along with salt and pepper until everything is well coated and seasoned. Place the veggies on a sheet pan and make sure they are spread out and not overcrowded (you want some room on the pan so they don't end up steaming). Place in a pre-heated oven set at 400 degrees for 30 minutes. Then flip the veggies and place back in the oven for another 20-25+ minutes until they are tender and beautifully golden brown (even slightly charred). Let the veggies rest with a tent of aluminum foil for a few minutes before serving. Great for meal prepping large batches of veggies that can be used in many different recipes, such as in quinoa bowls, wraps, salads, or as just a side to some protein.
