We eat with our eyes – can we see what we are eating?   They call them inclusions – those delicious nuts, candies, chocolate chips, pieces of cookie dough and anything the imagination can conjure up, to add to ice cream.  Consumers see them as a measure of quality, if there are many added ingredients, it must be really good ice cream.   In one project, we checked to see how many more inclusions  had to be added for consumers to see “more”. There needed to be at least 20-25% more inclusions before consumers could identify a visual difference.   This didn’t sit well with the company - significant extra cost in ingredients before consumers could “see” extra quality and no noticeable improvement in flavour.   The solution – make those additions bigger in size!  If consumers can see them, they are reassured about quality.   The flavour is still highly acceptable and there is no extra cost to the company.    Are we fooling the consumer?  I think it is more about knowing the visual cues for consumers and ensuring that quality cues are present.  What are your thoughts?   #consumerinsights #marketresearch #icecream

Answer to this week's: "What the * is in our products?" trivia.... Chicken Shack's Chicken Sandwich I thought it would be a tough one, but you all guessed it pretty quickly. Foodbabe put out a very interesting piece showing all of the different fast food chicken sandwiches next to each other by ingredient. The ingredient list was substantially longer than Chick-Fil-A, McDonalds, and Wendy's Pretty weird when Chicken Shack says on their website: “Food is at the center of what we do. We’re committed to sourcing real, premium ingredients to deliver menu items our guests crave and can feel good about eating.
