As I was walking in the countryside yesterday and noticed tons of oak leaves on the ground. Fairly normal in Autumn in the UK, but it made me think of the tradition in Brittany, in France, of having small fields and whether these were small on purpose, to allow more leaves to fall and regenerate the soil. Many of the trees were cut down in the 80s to be more productive.

I agree! the trees are deliberately planted on farmlands in a desired pattern and/or deliberately maintained on these farm lands (case of farmer managed natural regeneration).

FAO should publish a rating and ranking of all agroforestry tree species of the world, on the basis of their economic value and ecological values. This inventory is important for mitigating climate change, biodiversity loss and increasing income of the farmers.

FAO This is actually the best farming practices I would advise every potential farmer to dive into and the best advantage is that farmsell is also available to curb this by bringing markets closer.
