Let's face it, some weeks we have it all together when it comes to meal prep and other weeks, we just suck at this...but don't give up, you can just snack your way through the day IF you know what to put on your plate (in throw in a spare kids lunch box). Making-do with what's around at home has always come naturally for me and I learnt the art of balancing out my snacks pretty early on... When I grew up, we had to make our own school lunch from the age of 7 years old as my parents both worked full-time. Given that my parents also didn't believe in processed food, there was never a muesli bar, cracker or cheesy-mite scroll that I could grab-and-go for school, therefore I got pretty used to raiding the bottom drawer of the fridge for my quick and easy snacks. Yes, it might have looked weird to the other kids but I would happily munch on a raw carrot, a punnet of cherry tomatoes, a handful of green beans or snow peas, an avocado and I would even bite straight into a whole kiwi fruit with the skin on. Next, I'd find myself a container to pack some plain Greek yoghurt, nuts/seeds/dried fruit and if I was lucky, there'd be some left overs so I would take a thermos with either stir-fry, bolognaise, casserole and bubble and squeak (roast veg and meat all mashed together with cabbage). Snacking on veggies, salads and fruits came naturally to me as there was nothing else that was ready to eat from the pantry unless you wanted to cook some oats or bake/cook something completely from scratch. Plus sandwiches were never really an option for me as our bread lived in the freezer to 'keep it fresh' however it always had freezer-burn. As a treat, my sister and I would save up our pocket money to buy fresh bakery rolls sometimes after school if we had to go back to mums pre-loved clothing shop for the afternoon.
