Most of us will have heard of Nobu – and some have surely been lucky enough to visit one of the venues of what may be the most famous name in fine dining. Nobu celebrates 30 years this year – and here is a special piece by Wallpaper magazine about Nobu, the idea and the co-founder Nobuyuki Matsuhisa. It started out in Tribeca in New York City and has now gown to 50 venues and 27 hotels all around the world. You may want to read this as a “weekend business case study” and try to deconstruct just what made Nobu so successful? The idea of fusion of Japanese and Peruvian that worked well with the modern trends (or maybe it set the trend?), the welcoming space, simplicity and quality in ingredients? Plus, many businesses lose their success and the core of their true values during a rapid expansion process, that tends to be focused on the commercial side of things rather than the “hard-to-grasp” notions of feel, vibe and identity. It seems not to have happened with Nobu, but why? I think Nobu has interesting questions also from a business point of view, not just a famous menu. Inspired by this model, I’ve been thinking about how fine dining could adopt a similar approach—bringing the highest quality, sustainably sourced food to more people without compromising on values. A Tiered Dining Experience: Exclusivity Meets Accessibility Imagine a fine dining experience layered like a luxury brand’s collections, each tier deeply rooted in sustainability, craft, and community. Here’s what that vision could look like: 1. Signature Tier: The Pinnacle of Craftsmanship In this tier, like couture, we’d focus on the most exclusive, immersive experience—a curated, limited-capacity dining journey where the artistry of fine dining shines. Think seasonal, rare ingredients sourced ethically, presented in ways that celebrate each element's unique origin. 2. Local Collection: Supporting Our Roots Much like prêt-à-porter fashion, this tier would be a love letter to our immediate ecosystem. By partnering with local farmers and artisans, we could create a menu that reflects the very best of our region’s produce, supporting small-scale suppliers and bringing our community into the heart of the dining experience. 3. Community Tier: A Taste of Luxury for All Here’s where fine dining’s essence becomes accessible—offering products like house-made sauces or artisanal grains from the kitchen, or hosting pop-up events. This tier would invite more people to experience a touch of high-quality, sustainably-minded dining, bringing fine dining’s craft to a broader audience.
