How does cellar climate affect the barrel-aged wine? ‣‣‣ The barrels gradually transfer the aromatic and flavour components, making the wine richer and more complex. The cellar's climate fundamentally influences the characteristics of the barrel-aged wines. Cooler temperatures and higher humidity can result in fresher and cleaner wines, while too high temperatures, for example, can accelerate the ageing process, which can cause the wine to age more quickly.
