The production of GÔDE is a two fold event : Let the magic work through the blending of two ancestral crafts: Brewing and the traditional method (la “Méthode Traditionnelle”). First part occurs like a traditional beer : BREWING 🍺 Second part is the well-known « Méthode Traditionnelle » 🍾 usually used to produce sparkling wines. After adding “liqueur de tirage” and “champagne yeast” a second fermentation and sparkling process take place in the bottle. Then we have a well-deserved rest in our cellars, a Maturation / Ageing on lees for minimum 6 month. Finally, we start a process known as « Remuage » (riddling process /rotated champers) in champagne racks called “pupitres”. The bottles are turned around and brought from a horizontal into a vertical position. A turn is made every eight hours and after 4 weeks, the bottles will be standing upright. If you are a fan of oaky chardonnay, then zinc plays an additional role in that aspect of the wine-making process, the barrel. Though the main star of the barrel is the wood and the individual cooper’s mastery that is required to make a watertight barrel, the galvanized hoops are of critical importance to keeping the barrel that way. A single oak tree can only produce enough wood for the creation of about 2 barrels, so it is incredibly important that the final product be made to last, as oak barrels can be used for up to a hundred years. Using galvanized metal hoops also ensures that over the decades there is significantly less worry regarding the deterioration of the barrel. #zinc #wine #vineyard #winebarrel #internationalzincassociation

The other day I had a conversation with a colleague about beers that include oats in the recipes. There is a type of gratin oats that is easy to use, however, at least in our market it is not easy to find and in some cases very expensive, so traditional oats are the most suitable for making our beers. Now, what happens with oats? The tendency of this grain is to become a chewy mass which clumps together on the false bottoms of the mash tun, causing our process to be affected with a "stock mash" and a slow flow when the wort is transferred to the boiling tank. In some cases this flow even stops. What to do in this case? What is my recommendation? It has helped me a lot, mainly when we make New England IPAS-type beers, using rice hulls. This material is tasteless, odorless and works as a natural filter within the mash as it helps permeate and allows the liquid to flow, separating the oat particles. It is easy to access and very economical. Rice hulls will also help you when you make beers with a high percentage of unmalted wheat, and even when you make heavy beers with a lot of barley and wheat. Using club soda is the first choice. It is a tried-and-true technique for getting rid of red wine stains and marks that is also cheap. Here's some terminology for your tales 📚🍺 Ever heard of EBC? It's short for European Brewery Convention, a neat tool brewers use to measure beer colour. Low values mean lighter hues, like crisp pale ales, while higher values bring out the dark, rich tones of stouts and porters.
