GDK (German Doner Kebab) chief executive Simon Wallis has told Propel it will pass the 150-store landmark in 2024 as it targets filling “bags of white space” outside London, including its first drive-thru. He said the brand also plans to further roll out its travel hub locations, smaller format stores and breakfast offer, as it works towards its target of 300 stores by 2028. I’ve been in this business for 14 years, a career change from Non-Profit & Corporate. A perfect necessity during the time of 2008 recession, when I took the WSET certification in 2009 and climbed up to diploma candidacy along the years. I worked my way up, from zero, volunteered, worked in retails, polished glasses at events and tastings, worked stocking cellars, and worked events networking. I kept the hunger to grow, and learn all trades of the business. It wasn’t handed to me, I had to earn it. I worked several harvests around the world. I’ve been a Sommelier, Beverage / Operations Manager for over 9 years. I’m seasoned, and I can tell you the road to this journey has been one that has tested my leadership in all traits. It hasn’t been easy, I had to invest in all this knowledge. Deal with instability of the trade and also be penalized by people because of my choices in this career. I’ll defend my curriculum and background, because it took me a lot of sacrifice. I have been judged by my chronological work timeline, they made it hard, without understanding or giving me the chance to convey the positive asset that I can be. I’ve been bold and straightforward, that’s often looked as too daring. Well, that won’t change. The industry can be both gratifying, but also brutal, where you’re constantly have to stay afloat or become obsolete, not everyone will be there on your tough times, but others will be there for a lifetime, it takes patience, a tough attitude, and integrity to earn respect. I’ve seen over the years how things that were kept out of reach for professionals are now accessible within a reach, in an era where social media is highly encouraged. It wasn’t the same back then. My advice is to always remain true to yourself, work hard, and enjoy the experience. If you’re here for the money or instant gratification, then the wine business isn’t for you.
