Good morning everyone, I would like to share a blast from the past: The dramatic [2007] Communication from the European Commission: "The June European Council conclusions stated: "The Council of the European Union discussed the current situation on the dairy market." "The dairy market situation has deteriorated dramatically during the last 12 months. After a price spike in 2007 alongside the high food prices in general,". We know now of course that what ensued was a 3 year investigation packed with scandals of cheaper cheese substitutes [made from vegetable oils, proteins, and additives,] often without clear labelling. These substitutes, produced by companies like KaTech Ingredient Solutions and Cheesepop food group, were designed to capture the taste, texture, and melting properties like the real deal. Cheese analogues were so good because people simply couldn't tell the difference and that was due to one magic ingredient that vegan cheeses today don't have and therefore struggle to replicate the taste and texture: Casein. But if you know me you know where this is going. In recent years there has been an upsurge in companies challenging the dairy industry by creating the casein protein through precision fermentation or through cellular agriculture. TurtleTree (not specifically Casein yet), New Culture, Perfect Day, Formo, Remilk, Imagindairy, and even with molecular agriculture from Pigmentum who have rebranded themselves to Plantopia Bio.
