That sounds exciting and like such an interesting challenge: Wood maturation below 0.5% abv. OR perhaps not in actual casks? The world of oak cask alternative is growing, and quite a few of those are stable even in water. The comes the question of mouthfeel? I would be very exciting to see how this develops!! The potential for drinks for adults with no or a low content of alcohol is both immense and largely untapped.
